Seattle Bleu London Broil
2-1/2 lb. aged, top-quality flank steak
3 oz, Black Swan Seattle Bleu Dressing
1 tablespoon butter
6 mushrooms, sliced
4 oz, Black Swan Seattle Bleu Dressing
Marinate flank steak in 3 oz. Black Swan Seattle Bleu Dressing for 8 to 24 hours in the refrigerator.
Preheat broiler 10 minutes, or as manufacturer directs. Remove flank steak from bleu cheese marinate. Arrange steak on greased broiler rack. Place steak 1-1/2" to 2" below heat; broil just 5 minutes on each side. Remove from heat. Cut, diagonally across grain, into very thin slices. Place on heated platter. Pass mushroom sauce.
Mushroom sauce: Sauté sliced mushrooms in butter until brown, add Black Swan Seattle Bleu Dressing, heat over medium heat until just starting to boil, do not over cook.
Note: Nice for hot grilled beef sandwiches.
