Seattle Bleu Beef Tenderloin
8 oz Black Swan Seattle Bleu Dressing
1/4 cup minced fresh Italian parsley
2 tablespoon prepared horseradish
1 (2 pound) beef tenderloin
1/2 teaspoon lemon-pepper seasoning
To make sauce for garnishing, combine Black Swan Seattle Bleu Dressing, minced parsley, and horseradish, Cover and set aside.
Trim fat from tenderloin. Sprinkle lemon-pepper seasoning over tenderloin; place on a rack in a roasting pan coated with cooking spray. Bake at 500oF. for 35 minutes or until meat thermometer registers 145oF. (medium rare) or 160oF. (medium). Let stand 10 minutes before slicing. Garnish with prepared sauce.
