White Bean and Tuna Salad

4 cups cooked white beans, recipe below (canned maybe substituted)

8 oz tuna, fresh or canned (drained)

1 cup roasted red and green bell peppers

1 cup blanched carrots sliced on the diagonal about 1/4" thick

1 cup blanched green beans cut into 1" lengths

1 cup quartered cherry tomatoes
-
4 green onions (white and light green parts only), sliced diagonally

1 small red onion,. diced

1 tablespoon Italian parsley
-
2 tablespoons cilantro, minced

4 oz. Black Swan Indian Summer Raspberry Dressing

Salt and freshly ground black pepper

shredded Romano cheese
While the beans are still warm, toss them with the Black Swan Indian Summer Raspberry Dressing, green and red onions. (If using canned beans, heat them gently, drain and rinse before dressing them.) Allow to fully cool. When cool, toss gently with the tuna, bell peppers, carrots, green beans, tomatoes, and herbs. Season to taste with salt and pepper, garnish with Romano cheese.
Alternatives: Sliced chicken breast, Italian sausage meat.
