Raspberry Waldorf Salad
1/4 cup seasoned croutons
2 cups diced apple, unpeeled
1 cup diced celery
1/2 cup broken nuts (walnuts, pecans)
1/4 cup mayonnaise
4 oz. Black Swan Indian Summer Raspberry Dressing
Butter lettuce
Mix the mayonnaise with the Black Swan Indian Summer Raspberry Dressing. Toss apple, celery and nuts with the raspberry-mayonnaise mixture (the salad may be prepared to this point and refrigerated until ready to serve).
Make 4 lettuce cups by slitting a butter lettuce leaf apart and overlap, or overlap two smaller leaves to form each cup. Serve the salad in the prepared lettuce cups. Serve immediately.
