Three Bean Salad

1-1/2 cups garbanzo beans

1-1/2 cups black beans

1-1/2 cups pinto beans
-
3 plum tomatoes, diced or cut into wedges

1/2 cup frozen corn

1 red onion, diced
-
1/2 cup chopped fresh cilantro

6 oz. Black Swan Chipotle Dressing

1/2 teaspoon cumin
Defrost the corn. If using canned beans drain and rinse them before continuing. Toss all ingredients in a medium size bowl, season with salt and pepper to taste. Cover and refrigerate several hours before serving.
Serves 6
Note: Any three type of beans can be used. Different colors and size makes the salad more interesting.
