Grilled Chicken Caesar Salad
1 chicken breast, skinless and boneless
1 head Romaine lettuce, washed, dried, and torn into bite-sized pieces
1/4 cup grated Parmesan cheese
1/2 cup croutons
2 teaspoons capers, washed and drained
4 oz. Black Swan Classic Caesar Dressing
Season chicken with salt and pepper. Grill chicken over medium-hot coals. Cook for 10-12 minutes turning once. Remove the chicken from the grill and allow to rest 5 minutes before slicing at an angle, across the grain, into 1/4-inch thick strips.
Toss the Romaine lettuce with the capers and Parmesan cheese. Add the Black Swan Classic Caesar Dressing. Toss lightly. Add the croutons and toss again. Serve on chilled salad plates, top each salad with the sliced chicken breast.
